Speckled Pea Microgreens and Sprouts

The speckled pea, also known as the Austrian winter pea, is a cool-season legume that belongs to the Pisum sativum family.

This particular variety of pea features a greenish-yellow seed coat with brown speckles, giving it its distinctive appearance. Speckled peas are widely used in agriculture for their ability to fix nitrogen in the soil, making them an important crop for sustainable farming practices.

Historically, speckled peas were an important food source for many cultures. They were a staple crop for ancient civilizations like the Greeks and Romans and were often used to feed soldiers and slaves. During the Middle Ages, peas were a popular food among peasants and were often eaten in soups or stews.

How to Grow Microgreens:

Materials needed to grow speckled pea microgreens: 

  • Speckled pea seeds
  • Growing tray or container
  • Organic potting soil
  • Water
  • Spray bottle

Directions to grow speckled pea microgreens:

  1. Soak the speckled pea seeds in water for 4-6 hours to help them germinate faster.
  2. Fill the growing tray or container with organic potting soil, leaving about an inch of space at the top.
  3. Scatter the soaked speckled pea seeds on top of the soil, making sure they are evenly distributed.
  4. Lightly water the soil using a spray bottle, being careful not to overwater.
  5. Cover the container with a lid or plastic wrap to create a humid environment and place it in a warm, bright location.
  6. Check the seeds daily and mist them with water as needed to keep the soil moist.
  7. After 3-4 days, the seeds should start to germinate and sprout. Remove the cover and continue to mist the microgreens daily.
  8. Once the speckled pea microgreens have reached the desired height (usually 2-3 inches), they are ready to harvest. Use a pair of scissors to cut the microgreens just above the soil level.
  9. Rinse the microgreens thoroughly and use them in salads, sandwiches, or as a garnish for soups and stews.
 

How to Grow Sprouts:

Materials needed to grow speckled pea sprouts in a jar:

Speckled pea seeds
Wide-mouthed glass jar
Cheesecloth or sprouting lid
Water

Directions to grow speckled pea sprouts in a jar:

Measure out about 1/4 cup of speckled pea seeds and rinse them thoroughly in a fine-mesh strainer.
Place the rinsed seeds in the glass jar and fill the jar about 1/3 full with cool water.
Cover the mouth of the jar with cheesecloth or a sprouting lid and secure it in place with a rubber band.
Let the seeds soak in the water for about 8-12 hours.
Drain the water from the jar and rinse the seeds thoroughly with cool water.
Tilt the jar so that the seeds are spread evenly along the bottom.
Place the jar in a well-lit spot, but not in direct sunlight, and at a room temperature of 60-70°F.
Rinse the seeds twice a day with cool water, making sure to drain all the water after each rinse.
The speckled pea sprouts will start to grow in about 3-5 days. Continue to rinse the sprouts twice a day until they reach the desired length.

Once the sprouts are ready, harvest them by gently removing them from the jar and rinsing them thoroughly.

Store the sprouts in a sealed container in the refrigerator for up to 1 week.
